two almond meal muffins (recipe)

red peppers
sweet potatoes
zucchini
spinach, cooked in coconut oil

dinner
pork chops seasoned with basil, oregano & paprika. cooked in coconut oil.
baked butternut squash
iceberg lettuce salad w/ balsamic vinaigrette and olive oil (not photographed)
Feelings: Day 1 went quiet well. I haven't really had any cravings for snacks, which is pretty unusual when comparing with other peoples accounts of their first day. No munchies means it was easy to stay on track and not cheat. I suspect tomorrow will be more difficult as my body will begin to miss the simple sugars that were part of my old diet.
Extra notes: I figure the only complicated item on today's menu worth posting is for the paleo muffins. I'll get that posted shortly!
